One Bowl Choc-Orange Cake …

Ingredients ...
  • 1 ¼ cups self-raising flour
  • 1 cup castor sugar
  • ⅓ cup cocoa
  • ½ teaspoon bi-carbonate soda
  • 1 ½ tablespoons orange zest
  • ⅔ cup vegetable oil
  • 2 eggs
  • ⅓ cup orange juice
  • Icing:
  • 1 tablespoon butter
  • 3 tablespoons dark chocolate chips
  • 1 tablespoon hot water
  • ½ cup icing sugar, sifted
Method ...
  1. Preheat oven to 180C (fan-forced). Lightly spray a 20 cm cake tin with cooking spray and line the sides and base with baking paper. Allow the baking paper to extend approximately one inch above the side of the cake tin.
  2. Combine all ingredients in the bowl of an electric mixer. Beat for a couple of minutes on a low speed to combine the ingredients, then increase the speed to medium for approximately 3 minutes or until the mixture is smooth and has changed colour slightly and lightened.
  3. Pour mixture into the prepared cake tin and bake for approximately 45 minutes.
  4. Remove cake tin from oven and allow to stand for 5 minutes. Lift cake from tin, remove the baking paper and transfer to a wire rack to cool completely.
  5. To make the icing, melt the butter in a small saucepan over a very low heat.
  6. Remove the saucepan from the stove, add the dark chocolate chips and stir until melted and combined with the butter.
  7. Add the hot water to the chocolate mixture and stir to combine.
  8. Gradually add the icing sugar, stirring to combine until smooth.
  9. Spread a layer of the icing over the top of the cake surface.
