“Be My Valentine” Red Velvet Cupcakes …

Ingredients ...
  • 1 cup milk
  • 1 tablespoon vinegar
  • ½ cup butter
  • 1 ¼ cups caster sugar
  • 2 large eggs
  • 1 tablespoon red food colouring
  • 2 teaspoons vanilla essence
  • ½ teaspoon bicarb soda
  • 1 tablespoon white vinegar, extra
  • 2 cups self-raising flour
  • ¼ cup cocoa
Method ...
  1. Preheat oven to 170C (fan forced). Add cupcake wrappers to muffin tins … this recipe will make approximately 20 cupcakes … or alternatively, very lightly spray some silicon moulds.
  2. Combine milk and one tablespoon of vinegar in a small jug, mix and set aside.
  3. In a large bowl, use an electric mixer to beat the butter and sugar until it’s light and fluffy.
  4. Add eggs, milk mixture, red food colouring and vanilla essence and blend.
  5. Add bicarb soda and extra vinegar and stir to combine.
  6. In a separate bowl, sift the self-raising flour and cocoa to combine, then add to the wet ingredients. Mix until just combined.
  7. Spoon the cupcake mixture into the prepared muffin trays evenly.
  8. Bake for approximately 16 – 18 minutes or until the tops spring back when lightly touched. Remove from oven and allow the cupcakes to cool slightly in the tray. After 5 minutes, transfer cupcakes to wire rack to cool completely.
