  It won’t be long before summer is a distant memory and we’ll be looking for delicious, comfort food to warm our tummies … and here it is … Pumpkin and Vegetable Soup. This is a great soup recipe to whip up at the end of the week when you open the vegetable crisper in the fridge and find lots of leftover veggies.   Cauliflower seems to be one of those vegetables you either love or you hate … there doesn’t seem to be a middle ground with it. I happen to love cauliflower and will eat it no matter how it’s served. My kids are a little fussier but will gobble it up if served with a white sauce and cheese.   Chicken soup is the ultimate comfort food … good for the soul, soothing and, if Grandma was to be believed, it even helped you recover from a cold. Maybe it does, maybe it doesn’t … who knows but at the very least, this homemade recipe is absolutely delicious! Although winter is almost a distant memory, I still love making soup all year round.  It’s perfect to freeze and is a quick, easy, nutritious option for lunch or when you need dinner in a hurry.  This soup is so delicious and really didn’t take all that long to make.  Garnish with some basil and accompany with some toast with melted cheese or parmesan and you’ll have dinner on the table in no time at all.   If fennel is a vegetable that you haven’t tried before, give it a go in this recipe as the flavour is quite subtle.  Enjoy!   Tomato Soup with Celery and … read more

Well, winter has finally arrived!  It’s chilly and definitely the time to drag out those winter woolies!  It’s also the time to cook up some yummy soup and this one’s a winner at my house … hearty, rustic and delicious! Pea and Ham Soup …

Lamb Shank and Vegetable Soup …

  I love soup and nothing warms me in winter quite like a delicious, hearty bowl of homemade soup ... a little bowl of goodness!!  I haven’t had much success with lamb shanks in the past but I was determined not to give up, so I tried again … and boy, I’m glad I did.  This recipe produced a richly-flavoured soup with tender, succulent lamb that literally fell off the bone.   I served this with thickly sliced Sour Dough Bread (toasted), sprinkled with grated cheddar cheese and a dash of parmesan and then popped under the grill for just a couple of minutes!  Yummy, … read more
