Almond Oat Health Muffins …

My hubby loves to keep fit and exercises most days. If he’s not kayaking or running, you’ll find him in the gym.  In keeping with his healthy lifestyle, he watches fairly carefully what he eats, so these healthy muffins are perfect for him to take to work for morning tea.  Mind you, I find them pretty hard to resist too … they’re absolutely delicious and freeze beautifully.  Enjoy!

Almond Oat Health Muffins …

Ingredients ...
  • 2 cups almond meal
  • 1 cup rolled oats
  • ½ teaspoon ground nutmeg
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • ½ cup walnuts, chopped
  • ¾ cup dates, chopped
  • ½ cup chocolate chips
  • 1 cup zucchini, grated
  • 1 cup carrot, grated
  • 3 eggs, beaten
  • ½ cup butter, melted
  • ½ cup maple syrup
  • 1 teaspoon vanilla extract
Method ...
  1. Preheat oven to 180C and line a 12-cup muffin tray with wrappers.
  2. Combine the almond meal, rolled oats, nutmeg, cinnamon, baking powder, walnuts, dates, chocolate chips, zucchini and carrot in a large bowl.
  3. In a separate bowl, combine the eggs, butter, maple syrup and vanilla extract and whisk together.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. The mix will be thick and lumpy.
  5. Spoon the mixture evenly between the 12 wrappers in the muffin tray and bake for approximately 25 – 30 minutes. The muffins should be browned on the top and a skewer inserted into the centre of the muffin should come out cleanly.
