It’s no secret that I love any recipe that can be whipped up in a single bowl and this Apple Spice Loaf is one such recipe. Divinely simple and just as delicious, I guarantee this will become a firm favourite. This loaf is so moist and freezes beautifully, making it perfect to bake on the weekend to freeze for lunchboxes through the week.

 

I have used two of my favourite smaller loaf tins for this recipe because I find I get a more consistent texture through each of the loaves. I bought them from Daiso and use them a lot when I bake. They measure 18 cm long x 8.5 cm wide x 6 cm deep. You could bake this as a single loaf in a larger tin but you would need to adjust the cooking times and bake these for a little longer to cook them all the way through … maybe an extra 10 – 15 minutes. … enjoy!

  • 1 ½ cups self-raising flour
  • 1 ½ teaspoons mixed spice
  • ⅓ cup brown sugar
  • ½ cup castor sugar
  • 1 teaspoon bicarbonate of soda
  • ½ cup vegetable oil
  • 2 eggs, lightly beaten
  • 3 medium green apples, peeled and grated
Method ...
  1. Preheat oven to 180C (fan-forced).
  2. Lightly spray 2 small loaf tins and line the base and the 2 long sides of the tin with baking paper. Allow the baking paper to extend over each edge by roughly 2 cms.
  3. In a large bowl, add the self-raising flour, mixed spice, brown sugar, castor sugar and bicarbonate of soda. Stir to combine.
  4. Make a well in the centre of the dry ingredients and add the vegetable oil, eggs and grated apples. Mix well to combine
  5. Spread the mixture evenly between the 2 loaf tins and level the top of each loaf with a spoon.
  6. Bake for 35 – 40 minutes until golden on the top and test with a skewer which should come out cleanly.
  7. Remove from the oven and stand in the loaf tins for approximately 10 minutes. Transfer to a wire rack, removing the baking paper, to cool completely. Slice into thick slices and either serve or freeze.
