Chicken Curry with Potato and Peas

 

It can sometimes be a rush to get dinner on the table when you’ve been at work all day … that’s what makes this recipe so perfect! It uses fairly simple ingredients and is relatively quick and easy to prepare. This is also a very mild curry so even the kids should enjoy it!

  • 2 large potatoes, peeled and chopped into small cubes
  • 2 cups broccoli, cut into florets
  • 1 tablespoon olive oil
  • 2 cloves garlic, crushed
  • 1 teaspoon ginger, crushed
  • 1 large onion, sliced
  • ¼ cup tikka masala curry paste
  • 500 - 600g chicken tenderloins
  • 300ml lite cream
  • 1 cup frozen peas
  • ½ cup greek-style yoghurt
  • 2 tablespoons lime juice, freshly squeezed
Method ...
  1. Steam potatoes until just tender, drain.
  2. Steam broccoli until just tender, drain.
  3. Heat oil in large saucepan; cook garlic, ginger and onions until transparent.
  4. Add tikka masala curry paste and cook, stirring for approximately 3 minutes, until fragrant.
  5. Add chicken to pan and cook gently, searing the outside.
  6. Add cream and simmer gently for approximately 5 minutes or until chicken is cooked through.
  7. Add potato, peas and yoghurt; stir over low heat for a couple of minutes until peas are heated through.
  8. Add broccoli and stir in lime juice. Serve with steamed rice and if you like, add raita and naan bread.

  1. I like how there’s a good amount of vegetables in this curry and how it’s finished with a squeeze of lime. We all love curry in this house and this is great because it can be made quickly xx

    • I’m a big fan of extra veggies and I’ll try to incorporate them into stews, curries and casseroles wherever I can … it’s a great way to get kids to eat some veggies that they wouldn’t normally x
