Lamb & Vegetable Sausage Rolls

 

It’s hard to beat a good sausage roll, especially if it’s home made, and this recipe for Lamb and Vegetable Sausage Rolls is perfect for parties, lunches or a snack. Don’t be afraid to give them a go as they’re really quite easy to make … enjoy!

Ingredients ...
  • 1 tablespoon olive oil
  • 1 small brown onion, grated
  • 1 small carrot, grated
  • 2 sticks celery, finely diced
  • 1 cup pumpkin, grated
  • 1 clove garlic, crushed
  • 1 ½ teaspoons fennel seeds
  • ½ cup breadcrumbs
  • 500g lamb mince
  • 1 egg
  • 4 sheets frozen puff pastry
  • milk, for brushing top of sausage rolls
Method ...
  1. Preheat oven to 200C and line 2 baking trays with baking paper.
  2. Combine all ingredients (except puff pastry and milk) in a single bowl and mix by hand to ensure ingredients are well combined.
  3. Place one sheet of puff pastry on a large flat surface.
  4. Divide the mince mixture into four equal portions, make one portion into a thick sausage-like roll and lay it lengthways on the puff pastry sheet.
  5. Trim the edge of the puff pastry sheet if there is too much, roll up the pastry firmly to encase the mince mixture and turn so the edge of the seam is on the bottom.
  6. Cut the roll into four equal pieces and place these on one of the prepared baking trays. Repeat with the rest of the mince mixture and pastry sheets. When finished, there will be 16 large sausage rolls.
  7. Brush the top of each sausage roll with milk using a pastry brush and, if desired, sprinkle with sesame seeds.
  8. Bake for approximately 25 minutes or until the pastry is puffed and golden brown.
  9. Transfer the sausage rolls to a cooling rack and allow to cool for 5 minutes, then serve with your favourite sauce.

 

Clever Tricks, Tips and Hints …

 

  • Use cookie cutters to cut shapes from the leftover pastry that has been trimmed from the edges and place the shapes on top of each sausage roll … the kids will love it.

 

  • These are delicious cold making them perfect for school lunches the next day. If desired, include a small bottle of tomato, barbecue or chilli sauce.

  1. It’s definitely sausage roll weather and I just picked one up from a bakery for lunch. I’m not sure it had the vegetable content yours have though. Love how these have pumpkin. I would buy a slow-cooker! xx

    • I love sneaking in vegetables wherever I can although I have to admit my kids are pretty good and will eat just about anything! x
