This is a simple, yummy recipe but I’ve created two different versions. The first Pineapple Bliss Ball recipe is a healthy version using Almond Meal which would be great as an after school snack but should be avoided in lunchboxes if your school has a “nut-free” policy. The second Pineapple Bliss Ball recipe contains no nuts and is, therefore, a perfect option to send to school in lunchboxes. Both versions of this recipe contain only 4 ingredients meaning it’s quick and easy to make. Enjoy!

Recipe 1:

 

Pineapple Bliss Balls … A Healthy Snack ...

Ingredients ...
  • 1 ½ cups almond meal
  • 1 ½ cups desiccated coconut
  • 1 x 440g can crushed pineapple, drained
  • 1 tablespoon honey
  • extra desiccated coconut, for rolling
Method ...
  1. Please note: it’s important to drain as much juice as possible from the pineapple otherwise the mixture will be too “wet”. To do this, tip the contents of the can into a strainer and then press out the excess juice with the back of a spoon.
  2. Place almond meal, desiccated coconut, crushed pineapple and honey in a food processor and blend until well combined.
  3. Roll one tablespoonful of mixture into a ball and roll in extra desiccated coconut to coat. Repeat until all mixture has been used.
  4. This recipe will make approximately 22 balls (depending on the size you roll them). Store in the fridge until firm or freeze for up to 2 months.

  • 1 ½ packets of Marie Biscuits, crushed
  • 395ml can condensed milk
  • 1 x 440g can crushed pineapple, drained
  • 1 ¼ cups desiccated coconut
  • extra desiccated coconut, for rolling
Method ...

  2. Place crushed biscuits, condensed milk, crushed pineapple and desiccated coconut in a food processor and blend until well combined.
  3. Refrigerate mix for half an hour to firm up a little.
  4. Roll one tablespoonful of mixture into a ball and roll in extra desiccated coconut to coat. Repeat until all mixture has been used.
  5. This recipe will make approximately 22 balls (depending on the size you roll them). Store in the fridge until firm or freeze for up to 2 months.

    • Neither had I, Sonia … I found a spare tin of pineapple in the cupboard and thought “why not” and here they are … and they taste pretty good! x
