I don’t know about you, but I love a cooked breakfast on the weekend. The morning is generally more leisurely, everyone is more relaxed and it’s a great opportunity for us all to sit down together without everyone rushing off to school, university and work.

 

This is one of our weekend favourites … soft-boiled eggs, sausages (or bacon), some lovely crusty sour dough toast and a pot of home-made breakfast beans with mushrooms … yum!

 

This is a really simple recipe that takes very little time to make but is really delicious. It’s also a great homemade alternative to baked beans.

  • 1 medium brown onion, chopped finely
  • 3 rashers shortcut bacon, diced finely
  • 1 clove garlic, crushed
  • 1 x 400g can diced tomatoes
  • 1 tablespoon tomato paste
  • 1 tablespoon wholegrain mustard
  • ¼ cup water
  • 1 x 400 g can white beans, rinsed and drained
  • 5 – 6 large mushrooms, chopped into large chunks
  • ¼ cup fresh basil, roughly chopped
Method ...
  1. Heat a medium saucepan on a medium heat and cook onion, bacon and garlic for a couple of minutes, stirring frequently until onion is transparent. There is no need to add any oil to the saucepan as any bacon fat will grease the saucepan.
  2. Add diced tomatoes, tomato paste, wholegrain mustard and water to the saucepan. Stir to combine and allow the mixture to simmer gently for approximately 5 minutes until the sauce has reduced and thickened slightly.
  3. Add beans and mushrooms and simmer for a further couple of minutes until beans are heated through and mushrooms have just cooked.
  4. Remove from heat and stir in fresh basil.
  5. Serve with toast and eggs, sausages or bacon.
