Peanut Oat Cookies … One Recipe … 75 Cookies

 

This is a great recipe that’s really kind to the budget because this one recipe will produce 75 medium-sized cookies that your family are sure to love. These won’t be suitable for school lunchboxes because they contain peanuts but they are a perfect after-school snack served with a lovely, cold glass of milk. These cookies have a crispy and crunchy texture but are slightly chewy in the middle … just the way I like them … yum!

 

 

Peanut Oat Cookies … One Recipe … 75 Cookies …

Ingredients ...
  • 230g butter, room temperature
  • 2 cups castor sugar
  • 2 eggs
  • 1 ½ teaspoons vanilla essence
  • 2 ¼ cups plain flour, sifted
  • 1 teaspoon baking powder
  • ½ teaspoon bicarbonate of soda
  • 2 ¼ cups rolled oats
  • 1 cup crushed peanuts
Method ...
  1. Preheat oven to 160C (fan forced) and line 4 large baking trays with baking paper.
  2. Beat butter and castor sugar together in an electric mixture until pale and fluffy.
  3. Add eggs one at a time beating well each time.
  4. Add vanilla essence and whisk to combine.
  5. Remove bowl from electric mixer and add sifted flour, baking powder, bicarbonate of soda, oats and peanuts. Stir until all ingredients are well combined.
  6. Roll or squeeze 1 heaped teaspoon of cookie dough into balls (slightly smaller than a rum ball) and place on baking trays. Space the cookies to allow for spreading as they cook. Flatten each cookie gently with a fork.
  7. Bake cookies for approximately 14 minutes or until just browned. Remove from oven and leave to stand of baking trays for approximately 5 minutes before transferring to a wire rack to cool completely.

 

 

Clever Tricks, Tips and Hints …

 

  • These cookies freeze perfectly for up to 3 months but they honestly won’t last that long before they’re gobbled up.

 

  • Don’t be tempted to roll the cookie balls larger than a heaped teaspoonful of cookie dough because they will spread into each other. Each ball of dough should be roughly the size of a small Rum Ball.

 

  • If using a standard square baking tray, I usually only place 9 cookies on this sized tray. If using a larger, rectangular baking tray, there will usually be room for 12 cookies.
