Sweet Chilli Chicken Tortillas with Tropical Salsa

 

We love our Mexican food and previously I’ve shared some yummy dishes like Shredded Beef Tortillas, Mexican Beef Tacos and Nachos (that’s no so naughty). Today’s recipe is a fresh, tropical twist on a family favourite using chicken with a sweet, homemade salsa. This is not only delicious but quite refreshing and light … I hope you enjoy!

 

 

Sweet Chilli Chicken Tortillas with Tropical Salsa …

Ingredients ...
  • 500g chicken tenderloins (or 2 chicken breasts weighing approximately 500g)
  • 1 tablespoon olive oil
  • 3 cloves garlic, crushed
  • 1 lime, zest and juice
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • pinch cayenne pepper (you may want to leave this out if cooking for children)
  • 1 tablespoon Sweet Chilli Sauce
  • ½ teaspoon brown sugar
  • 2 tablespoons fresh coriander, finely chopped
  • Salsa:
  • 2 Roma tomatoes
  • ½ cup pineapple, finely chopped
  • ½ cup mango, finely chopped
  • ½ cup cucumber, finely chopped
  • 2 shallots, finely sliced
  • 2 teaspoons Sweet Chilli Sauce (optional)
  • lettuce
  • Cheese, grated
  • Coriander, extra
Method ...
  1. Combine oil, garlic, lime zest, lime juice, cumin, smoked paprika, cayenne pepper, Sweet Chilli Sauce and brown sugar in a small jug and stir to combine.
  2. Place chicken in a casserole dish. Pour over the mixture and mix through so the chicken is well coated. Set aside to marinate for at least ½ hour but longer if possible.
  3. Cook chicken in a relatively hot pan. Sear each side for approximately 5 minutes or until cooked through, turning each piece once.
  4. Remove from pan and allow chicken to rest and cool slightly whilst you prepare the salsa.
  5. To make the salsa, combine all ingredients and mix well.
  6. To serve, place tortilla on a plate and layer with lettuce, cheese, chicken and salsa. Sprinkle some extra coriander over the top and enjoy!

 

 

Clever Tricks, Tips and Hints …

 

  • I usually use fresh pineapple when making this recipe but tinned pineapple works well also … just be sure to drain it well to get rid of the excess juice, otherwise the salsa will be too “wet” and will make the enchilada soggy.

 

  • Substitute enchiladas with taco shells for a crunchy twist. Simply heat the tacos according to the instructions on the pack and fill with the lettuce, cheese, chicken, salsa and coriander.

 

  • This salsa is light and fresh and works perfectly as a dip for your next barbecue. Serve with either corn chips or rice crackers.

 

  • This recipe specifies Roma tomatoes. Regular tomatoes can be used but Roma tomatoes aren’t as juicy and for that reason work better in a salsa.
