Gingerbread Muffins

 

It’s been a big day of baking here today as I fill the freezer with muffins and other baked goodies in preparation for the kids going back to school and uni. Muffins are perfect because they freeze so well and will last in the freezer for up to 3 months.

 

When I’m packing school lunches, I simply take one from the container in the freezer, pop it in the kids lunchboxes and it’s defrosted by morning tea … easy! So, here’s another delicious flavour to add to your collection. Enjoy!

Gingerbread Muffins …

Ingredients ...
  • 2 cups self-raising flour
  • 2 tspns baking powder
  • 1 tbspn ground ginger
  • 1 tspn ground cinnamon
  • ½ cup brown sugar, firmly packed
  • 1 cup vegetable oil
  • 1 tspn vanilla essence
  • 1 cup milk
  • 2 eggs
Method ...
  1. Preheat oven to 180C and spray a 12-hole muffin pan.
  2. In a large mixing bowl, sift and combine the self-raising flour, baking powder. ginger, cinnamon and brown sugar.
  3. In a large jug combine oil, vanilla essence, milk and eggs and whisk with a fork until combined.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to over mix.
  5. Distribute mixture evenly between muffin holes and bake for approximately 16 minutes or until a skewer inserted comes out cleanly.
  6. Remove from oven and allow to sit in tray for approximately 5 minutes then transfer to a cooling rack. This recipe will make 12 muffins.

    • My kids take a muffin two or three times a week and, in preparation for school going back next week, my freezer is overflowing with muffins of every flavour at the moment!
