My family loves this recipe because it’s so yummy. Me, I love this recipe because it’s so quick and easy and I can get it on the table in around 30 minutes. Grab all the ingredients from the fridge and pantry … chop, measure, stir and cook … dinner served! It’s the perfect meal for those nights when you need dinner in a hurry. It won’t be suitable for anyone with a peanut allergy, so do be mindful of that! Enjoy!

Ingredients ...
  • 600 chicken tenderloins
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 tablespoon butter
  • ¼ cup smooth peanut butter
  • ½ cup chicken stock
  • ¼ cup honey
  • 1 teaspoon grainy mustard
  • 1 teaspoon curry powder
Method ...
  1. Remove any fat and sinew from chicken.
  2. Combine onion, garlic and butter in a dish and cook on HIGH in the microwave for 3 minutes.
  3. Stir in peanut butter, stock, honey, mustard and curry.
  4. Add chicken. Cook on HIGH in microwave for 6 minutes, turn chicken and cook on HIGH for a further 5 - 6 minutes.
  5. Serve with Jasmine rice and steamed vegetables.

 

 

Clever Tricks, Tips and Hints …

 

  • If you don’t have any chicken stock (either homemade or store bought) simply add ½ cup water and ½ teaspoon of chicken stock powder or ½ a chicken stock cube.

 

  • If you prefer a thicker sauce, mix some cornflour in water and add slowly (stirring as you go) to chicken after it’s cooked to thicken.

 

  • I prefer chicken tenderloins because they are so tender and moist but this recipe works well with chicken breast as well. Simply cut the chicken breast into pieces roughly the size of a chicken nugget.

    • The mustard does give this dish a nice “kick” … a dash of Tobasco Sauce is also a nice addition!
