Here’s a yummy recipe that will be perfect for your next party, great for the kids lunch boxes or ideal just as a sweet treat.  These are best refrigerated and served the next day as it gives them a chance to firm up a little.  Enjoy!

White Chocolate Apricot Balls …

Ingredients ...
  • ¾ cup white chocolate bits
  • 200g packet dried apricots, roughly chopped
  • 1 cup desiccated coconut
  • 2 teaspoons orange zest
  • ½ can sweetened condensed milk
  • extra desiccated coconut, for rolling
Method ...
  1. Place white chocolate bits and dried apricots in food processor and blend well.
  2. Add desiccated coconut and blend to combine.
  3. Add orange zest and sweetened condensed milk and blend to combine.
  4. Roll approximately 1 tablespoon of mixture into balls and then roll each ball in extra coconut and refrigerate.
  5. This recipe will make approximately 24 balls (depending on the size of each ball).
  6. These balls will freeze well for up to 3 months.

    Do you mean sweetened or unsweetened desiccated coconut?

    • Hi Julie, I use a brand called Mackenzies … I’ve just checked the packaging for the desiccated coconut and it doesn’t specify whether it’s sweetened or unsweetened. I guess you could try the recipe with either one and choose the flavour you prefer … thanks for stopping by!
