Toblerone Muffins …

You’ll be the most popular Mum in the street once you’ve whipped up a batch of these!  What else can I say but YUM!!

Do be aware, though, that Toblerone Chocolate Bars contain nuts so these muffins won’t be suitable for anyone with a nut allergy, therefore, please check your school food policy before sending these in school lunch boxes.

Ingredients ...
  • 3 cups plain flour (substitute Gluten free plain flour, if needed)
  • 3 tablespoons raw cacao (or substitute cocoa powder)
  • 1 tablespoon baking powder
  • 1 ½ cups brown sugar
  • 125g butter, melted and cooled slightly
  • 2 eggs
  • 1 ½ cups light milk
  • 1 cup Toblerone chocolate, chopped roughly (equivalent to approximately 3 x 50g Toblerone Chocolate Bars)
  • Extra Toblerone, chopped roughly to scatter on tops of muffins (equivalent to approximately 1 – 2 x 50g Toblerone Chocolate Bars)
Method ...
  1. Preheat oven to 140C (fan forced).
  2. Sift flour, cocoa powder, baking powder and brown sugar in a bowl and combine well.
  3. Lightly whisk eggs in jug then mix in butter and milk.
  4. Add liquid mixture to dry ingredients and add chopped chocolate. Fold in gently until just combined. Mixture will be chunky because of the chocolate chunks – be careful not to overmix.
  5. Place cupcake wrappers in holes of muffin pan. Distribute batter equally into the cases filling each one to approximately ⅔ full. Bake in oven for approximately 29 minutes (depending on your oven). Remove halfway through cooking time to scatter tops of muffins with the extra chopped Toblerone pieces. Remove from oven and allow to cool for 5 minutes before placing on a wire rack to cool completely.

 

Clever Tricks, Tips and Hints …

  • These muffins are quite rich and make an excellent dessert served warm with ice cream, cream or custard.
  • These muffins are suitable to freeze (i.e. if they last that long).
  • Toblerone Chocolate bars do go on sale quite regularly so that’s usually when I grab some to make these muffins.
  • Allow the mufffins to cool completely before removing them from the cupcake wrappers otherwise they will stick.
