Peach Muffins …

I love these Peach Muffins and once you’ve made them you’ll see why.  It’s a very simple recipe that only needs one bowl and one jug … love that!  I also love that these are a great option if you’re in a hurry and need breakfast on the go.

These muffins freeze very well and you can also use fresh peaches when they are in season if you prefer.  Enjoy!

Ingredients ...
  • 1 ½ cups plain flour
  • ¾ cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 egg
  • ⅓ cup vegetable oil
  • ½ cup milk
  • 2 teaspoons vanilla extract
  • 1 can sliced peaches (440g), chopped into small pieces
  • ⅓ tablespoon white sugar, extra
  • ½ teaspoon ground cinnamon, extra
Method ...
  1. Preheat oven to 200C. Add cupcake wrappers to a 12-hole muffin tray.
  2. Dice peaches into small pieces to give you approximately 1⅓ cups of diced peaches.
  3. Sift the plain flour, sugar, baking powder, ginger, cinnamon and salt together into bowl and mix until well blended.
  4. In a separate jug, whisk together the egg, vegetable oil, milk and vanilla extract until well blended.
  5. Add the wet and dry ingredients together and mix with a fork until just combined. Be careful to not over mix. Gently fold in half of the peaches (the muffin batter will be thick).
  6. Spoon the mixture evenly into 12 muffin holes (you will only roughly half fill each muffin hole).
  7. Distribute the remaining peaches onto the top and centre of each muffin.
  8. Combine the extra sugar and extra cinnamon and then sprinkle this on the top of the muffins.
  9. Bake for 22 minutes or until a skewer inserted into a muffin comes out cleanly.
  10. Remove muffins from muffin tray, place on a cooling rack and allow to cool.

 

Clever Tricks, Tips and Hints …

  • Allow the muffins to cool completely before attempting to remove the cupcake wrapper otherwise the muffin will stick to the wrapper.
  • These muffins will keep for 2 – 3 days in an air-tight container in the fridge and will freeze very well for up to 2 – 3 months also in an air-tight container.
