I’ve tried many chocolate biscuit recipes over the years and could never find one that I was entirely happy with.  So what do you do when that happens?  You make up your own!  So here it is … my very own recipe for what I think, are the best chocolate cookies ever!!  These are soft, fudgy and highly addictive … so don’t say you weren’t warned!

Ingredients ...
  • 125g butter, chopped
  • 1 ½ teaspoons vanilla extract
  • 1 ¼ cups brown sugar, firmly packed
  • 1 egg
  • ¼ cup self-raising flour, sifted (I used gluten free)
  • 1 cup plain flour, sifted (I used gluten free)
  • 1 teaspoon bicarbonate of soda
  • ⅓ cup cocoa powder (I used raw cacao)
  • ½ cup white chocolate bits
  • ½ cup milk chocolate bits
  • ½ cup dark chocolate bits
Method ...
  1. Preheat oven to 180C (or 160C if fan-forced). Line baking trays with baking paper, you may need 3 or 4.
  2. Beat together butter, vanilla extract, sugar and egg in a bowl using an electric mixer until blended and smooth. Stir in both flours (sifted), bicarb soda and cocoa powder. Stir in all chocolate bits.
  3. Drop rounded tablespoons of mixture onto trays. Flatten slightly with fingers and place about 3 - 4 cm apart to allow room to spread.
  4. Bake for 10 minutes. Leave cookies on trays for 5 minutes and then transfer to a wire rack to cool. This recipe will make 20 – 24 cookies depending on the size.

 

Clever Tricks, Tips and Hints …

  • Baking these cookies for only 10 minutes will give you a soft, gooey, fudgy biscuit.  I have also cooked them for 11 minutes to get a firmer result.  Just experiment with the time to get the texture you prefer.
  • To create a different version, add ½ – 1 cup macadamia nuts or you could also try walnuts.  Just remember that if you do include nuts, these cookies may no longer be suitable to send in lunchboxes if your school has a “nut-free” policy … check first.
  • These cookies will keep well in an air-tight container for 3 to 4 days but, to be honest, they probably won’t last that long.  This recipe is not suitable to freeze.
  • If you don’t have an electric mixer, put those muscles to work and use a hand mixer instead.
