Hi everyone,

I hope you had a wonderful, relaxing Mother’s Day.  I certainly did but today it was back to reality and routine and first job of the day was lunchboxes.  We decided to have a little bit of fun today and create a lunchbox using food of only one colour and we chose … YELLOW!

Now I would have thought this might be a tough challenge but it was surprisingly easy, so here’s a peek at what went into today’s lunchbox:

  • Curried Egg Sandwich
  • Corn on the Cob
  • Corn Chips
  • Cheesy Stars
  • Cherry Tomatoes (yellow)
  • Capsicum (yellow)
  • Pineapple
  • Kiwi Fruit (yellow)
  • Creepy Cheese Wholegrain Mini Bites Rice Cakes
  • Shortbread Biscuits (2)
  • Custard

Other yellow foods that could have been included are bananas, pears, watermelon (now available in a yellow variety), Lemon and Coconut Bliss Balls and corn relish dip … can you think of any others?

With a little bit of planning and preparation the night before, this lunchbox came together in a matter of minutes:

  • The egg for the sandwich was boiled the night before, grated and mixed with a tiny bit of mayonnaise and a dash of curry powder (very mild) and stored in the fridge in an airtight container.  The sandwich was made in the morning.
  • The corn was leftover from dinner the night before. When deciding what quantities to cook for dinner, I try to think ahead to lunches for the next day and cook extra which saves me time in the long run.
  • Cheesy Stars were cut out the night before and placed in the lunchbox container along with the capsicum, corn and cherry tomatoes.
  • Pineapple was cut up the night before and placed in the container.
  • The kiwi fruit I peeled and chopped in the morning because it stays fresher for longer being a softer fruit.
  • All food was packed in an insulated lunchbox with ice bricks and a bottle of cold, fresh water.

I also thought I would mention the cool little metal containers that are storing the kiwi fruit and the pineapple.  These each come with a clear lid and, for the cost of $2.80 each from Daiso, they were an absolute bargain.

  1. I love how you went with a colour scheme! The yellow is a great idea and I wouldn’t have known there are that many yellow lunch box foods until you revealed them. I’d love a curried egg sandwich right now – I’m on a 3-day juice fast and all I can think about is food xx

    • This was a bit of fun and it worked because the lunchbox came home completely empty! You’ll feel great after you juice fast but I’m not sure I would have your willpower … I like my food way too much! Good luck x

    • Lunchboxes can be a bit routine and monotonous and this was just a bit of fun! Next week I’m going to try another colour … maybe “Kermit” green … what do you think?
