I’m always looking for new and exciting things to add to my daughters’ lunchboxes.  These Lemon and Coconut Bliss Balls are a great little healthy snack and you can whip them up in not time at all.  These are a particularly great option because they contain no nuts.

Ingredients ...
  • 1 ½ cups shredded coconut (or substitute desiccated coconut)
  • 3 ½ cups Corn Flakes
  • 1 x 400g can Sweetened Condensed Milk
  • 2 tablespoons lemon zest (from 1 lemon)
  • 3 tablespoons freshly squeezed lemon juice (from 1 lemon)
  • 1 teaspoon vanilla extract
  • ½ cup desiccated coconut, extra
Method ...
  1. Place coconut and Corn Flakes into food processor and blend for 30 seconds (just long enough to reduce the Corn Flakes to large crumbs).
  2. Add Sweetened Condensed Milk, lemon zest, lemon juice and vanilla extract and process until mixture is firm and well combined.
  3. Roll into bit sized balls and then roll in extra desiccated coconut.
  4. Store in the refrigerator. This recipe will produce approx. 30 balls (depending on the size you make them) and is suitable to freeze.

 

Clever Tricks, Tips and Hints …

 

I like to use the Freedom Foods Corn Flakes as they are gluten free, wheat free, nut free and low in salt.  These can be found in the Health Food aisle at Woolworths and Coles.  They go on special quite regularly so that’s the time to pick up a few boxes.

 

If you would like an alternative to Corn Flakes you could try flaked quinoa, crushed oats or rice puffs.  Almond meal would also make a great substitute but then you probably wouldn’t be able to include these in school lunchboxes if your school has a nut free policy.  I haven’t made these Bliss Balls with any of the suggested alternative ingredients so you would need to play around with the quantities.

 

I like to use the Skim 99% Fat Free Sweetened Condensed Milk as that helps to reduce the calories/kilojoules in these Bliss Balls.

    Interesting flavour! I thought bliss balls were just a term my in laws used but it looks like it isn’t!

    • These are delicious, Lorraine! I call them Bliss Balls because they are so easy to make, healthy and the perfect snack when you’re on the go! I find one of these satisfies any craving without feeling too guilty. I’ve created lots of different varieties and will eventually share all of them here on the blog.

  2. I’ll give these a whirl, they look great and all of my kids love lemon, interestingly. The only issue will be keeping myself AWAY from them… highly addictive, I am sure.

    • Me too, Veggie Mama … and the best part is you get to scrape out the Condensed Milk tin and lick the spoon … my idea of “bliss”.
